Roasted slices of eggplant with layers of flavor and texture on top. We paired it with another recipe from the book, an herbed cauliflower salad. Fresh, flavorful, and filling.
Herb + Fenugreek Pork Tenderloin with Tomato and Onion Salad
We're craving citrus, farm fresh veggies, and mediterranean meats as we head into spring cooking. This recipe brings both of those things together and is prime for serving as a simple dinner for two or as a spread for a small gathering. Aegean: Recipes from the mountains to the sea was our inspiration for this dish and has us wanting to add feta, pita, lettuce and more every time we make it!
Mediterranean Inspired Grain Bowl
Grain bowls are the most fulfilling, meal prep friendly, satisfying meals. I don’t love reheated food so I usually avoid meal prepping, but in this case I keep all of the condiments on hand, precook the grains, and roast the veggies, then I can just assemble quickly whenever hunger strikes. I’ve acquired quite the collection of SKORDO products and was able to piece together blends that compliment each other and use a variety here to keep all of the components exciting.

After experimenting with many crab cake recipes through the years, we finally landed on this as the best. The panko breadcrumbs mixed with chives, salt, and pepper make the most delectable crust!
Mexican Mole Chicken Enchiladas
Mexican food has always been in my comfort zone. I can whip up a batch of margaritas, guacamole, and pico de gallo in my sleep. We have tacos once a week, and nachos are 100% adequate for lunch. There's one dish I always order out at restaurants and never make at home... Mole Enchiladas.
Vietnamese Rub Spatchcock Chicken
Now's as good a time as any to let you all in on a little secret: Whole chickens are my weakness. I love them so much. Especially when they're roasted. Even more when they're split and grilled! This recipe can be finished either way, but there's something about low and slow grilling that really lets a chicken shine!
The blend's lemongrass and coriander are bright contrasts to the soy sauce and the red pepper flakes balance the marinade with just enough heat. Enjoy!
French Toast with Posy Sugar
I’ve never been a fan of flowers, gifting or receiving, but floral sugar is certainly something I can get behind. All the smells, all the beautiful colors, no watering or responsibilities.
