Spruce Syrup
Each spring, the peak of their flavor, Pen & Cob Farm's spruce tips are sustainably harvested by hand and brought back to their farm kitchen where they are macerated in organic brown sugar. The brown sugar pulls the oils from the tips creating a sweet and surprisingly citrus tasting liquid.
Never diluted, this syrup is boiled to make just the right consistency without losing any of the incredible spruce flavor that makes it your go-to ingredient for everything from ice creams and salads to charcuterie boards and marinades. Drizzle it over ice cream, roasted pork, or a warm scone. Stir it into cocktails. Spoon it over cream cheese toast or grilled pineapple.
