Rosemary has a woody, balsamic, and somewhat astringent taste. Try it on fish in an Herbes de Provence mixture or rub it onto chicken with pears. We love baking it into bread like foccacia and using it to flavor homemade crackers. Pair it with lavendar and sprinkle it over your roasted potatoes. Because dried rosemary retains it's flavor well, you can add it during the beginning stages of cooking.
