Native to the island of Sri Lanka, Ground Ceylon Cinnamon, often confused with Cassia Cinnamon, is hailed as the "True Cinnamon". Unlike the spicier and bolder Cassia, Ceylon Cinnamon features a deeply complex yet subtle flavor that is warm and sweet with hints of citrus and cloves, perfect for pastries, cakes and desserts.
It also contains a much lower concentration of cinnamon oil (generally 1-2% by weight), while Cassia cinnamon typically comes in at 2-6% by weight. Because of this, many health enthusiasts swear by the pricier Ceylon variety.
