A playful twist to traditional soda bread, this recipe calls for a few more ingredients and incorporates our SKORDO Posy Sugar! The blend of vanilla bean sugar, lavender, rose, and hibiscus enriches the bread with a delicate sweetness and mild floral notes - a perfect morning bread for pairing with blueberry jam or butter with a extra sprinkle of SKORDO Posy Sugar!
Makes 1 loaf
Ingredients:
For bread:
- 4 cups of flour
- 1 ¼ cups buttermilk (see our note below on making your own if store-bought is unavailable!)
- 4 tablespoons SKORDO Posy Sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup (1 stick) softened unsalted butter
- 1 egg
* Make your own buttermilk by combining 1 1/4 tablespoons of vinegar or lemon juice and 1 1/4 cups milk. Stir and let sit for at least 5 minutes before using.
For wash:
- 1/4 cup (1/2 stick) unsalted butter, melted
- 1/2 teaspoon salt
- 1/4 cup buttermilk
Directions:
- Preheat oven to 375 Fahrenheit
- In a large bowl mix together the dry ingredients (flour, Posy Sugar, baking powder, baking soda and salt). Use a whisk to make sure it's well combined.
- Add the wet ingredients to the bowl (butter, buttermilk, and egg). Use a hand mixer or large wooden spoon to fully combine ingredients.
- Turn the dough out on to a lightly floured surface and kneed for about 10 minutes until the dough has consistency of Playdoh. Dust with flour as needed.
- Form the dough into a round loaf and place on a parchment paper-lined cookie sheet. Cut a large X in the top of the dough (this will help the dough to cook through).
- Place the dough in the oven and bake for 15 minutes. While that is cooking for the first round, make the wash.
- Melt the butter in the microwave or stovetop. Remove from heat and add the salt, and let it rest for a few minutes to cool slightly. Add the buttermilk to the butter and mix well. Stir occasionally to make sure it stays mixed well and combined.
- After bread has baked for 15 minutes, remove from oven and brush the glaze over the top of it. Return to the oven and cook for another 15 minutes.
- Remove from oven once again and brush once more with wash. Return to oven and cook for another 15 minutes.
- Remove from the oven and check the middle of the bread with a toothpick or fork. If it comes out clean, the bread is done. If it does not, brush with wash once more and return to the oven for another 10 minutes.
- Let bread sit for at least 20 minutes to before serving. Slice and enjoy!
We enjoy this bread with a berry jam or a spread of butter sprinkled with a bit more of Posy Sugar to taste!
