Central Provisions' CP French Fry Spice is the perfect partner for this Korean-inspired BBQ sauce - expect a little bit of kick on your next rack of ribs!
Makes 1 rack of ribs and 1 pint of BBQ sauce
*This recipe requires an overnight marinade.
Ingredients:
For the ribs:
- 1 rack of pork ribs
- 1/4 cup (1 small jar) CP French Fry Spice
- 1 tablespoon brown sugar
For the BBQ sauce:
- 3 cups ketchup
- 2/3 cup brown sugar
- 1/2 cup rice vinegar
- 2 tablespoons tomato paste
- 2 tablespoons gochujang
- 2 tablespoons yellow mustard
- 1 tablespoon fish sauce
- 3 tablespoons CP French Fry Spice
- 1 tablespoon black pepper
- 1 tablespoon salt
Directions:
- Combine the CP French Fry Spice and brown sugar in a small bowl and mix well.
- Rub the ribs with the spice mixture and refrigerate overnight.
- When ready to cook, set a smoker to 200 Fahrenheit and smoke for 1 hour. You could also bake in the oven or use a charcoal grill the same way (may loose smokey flavor).
- Wrap the ribs in parchment paper and then foil, and return to the smoker for another 1-2 hours, or until tender.
- While the ribs are smoking, make the BBQ sauce. Combine all sauce ingredients in a sauce pan and cook over medium heat until bubbling, then reduce to simmer on low for 30-45 minutes until reduced slightly and thickened. Set aside until ready to use.
- Remove ribs from the oven and take away foil packet. Brush with BBQ sauce and increase heat to 300 Fahrenheit.
- Brush the BBQ sauce every few minutes until you have a nice sticky lacquer. Remove ribs and let cool for a few minutes.
- Cut and serve!
