Fennel, with its mellow licorice flavor, is one of the Mediterranean's oldest cultivated plants. Add it to homemade pasta dough or combine it with feta, cheese, and olives to make a flavorful Greek bread. It is also a great addition to ground beef mixtures for hamburgers. Sprinkle some fennel into a chicken stew or use it in a spiced gravy for vegetable or lamb dishes.
