Saigon, also known as Vietnamese cinnamon, is spicier, more complex, and more pungent than Indonesian cinnamon. This is due to its higher oil content. In Vietnamese cuisine, Saigon cinnamon is a very common ingredient in the nation's most popular noodle soup, Pho. We find that it is especially well-suited for savory dishes. We put it in our Greek Chicken Kapama and it works perfectly!
