The the flavor and color. Altho is does melt quickly. Please oh please make this with sparkling sugar.
I really love this Blueberry Sugar, the taste of blueberry truly stands out, especially on baked goods. However, just to note: the sugar granules really, really tiny, and if they're applied to the top of say, moist muffins - if you don't enjoy the entire batch right away, any that you store will end up with grains of sugar that have melted into the muffin-tops to create this bluey kind of polka-dotted-smear.
