Mace - Ground
Mace comes from the nutmeg fruit and is the bright red web covering the nutmeg stone. It is used interchangeably with nutmeg, but has a lighter, subtler, and sweeter flavor. Mace is perfect when nutmeg could be too overpowering. We love it in dishes with floral fruits such as peaches and raspberries or use it to subtly flavor your pastry dough. For savory dishes, mace is an excellent complement to chicken, pork, white-fleshed fish, and root vegetables.
