Ras el Hanout
Ras el Hanout is a key ingredient in North African, especially Moroccan, cuisine. The name in Arabic means "head of the shop," and literally refers to the best spices the store has to offer. It's pungent and warm flavor goes very well in marinades, beef stews and tagines, and can also be used as a meat rub. Mix it with sour cream for a unique topping or toss is over popcorn for a savory snack. It is also the perfect seasoning for lamb chops or spiced pork tenderloin. Sprinkle it over steamed or roasted vegetables or make spiced butter and broil over fresh salmon for a nice meal.
