Chris and Paige, the duo behind the restaurant Central Provisions, have shared this recipe for Ras el Hanout Glazed Carrots. As part of our collaborative collection with Central Provisions, it uses the Ras el Hanout spice blend. This versatile spice blend adds a touch of heat and warmth to any dish and these carrots are no exception!

Serves 4-6

Ingredients:

  • 1 lb. local carrots, scrubbed well, trimmed but not peeled (if you can't locate local small carrots, halve and quarter lengthwise store-bought)
  • Salt
  • 4 tablespoons butter
  • 3 cloves garlic, smashed
  • 12 grams (~1 1/3 tablespoons) Ras el Hanout
  • Fresh oregano, roughly chopped, to taste
  • 2 tablespoons honey
  • Flakey sea salt, to serve

Directions:

  1. Preheat the oven to 350F
  2. In a large ovenproof saute pan or cast iron pan over medium heat, caramelize the carrots in butter with a few pinches of salt.
     
  3. Once carrots are nicely golden brown on all sides, add the garlic and transfer to the oven to continue cooking (cooking time varies depending on size of the carrots) 
  4. Once tender but still some texture, remove carrots from the oven and add the honey, oregano and Ras el Hanout
  5. Swirl carrots in the foaming honey, butter and spices over medium high heat until honey is reduced, the spices are toasted and carrots are glazed.
  6. Finish with chopped fresh oregano and flakey sea salt to taste, and serve!
