Chris and Paige, the duo behind the restaurant Central Provisions, have shared this recipe for a Baja Spiced Chex Mix. As part of our collaborative collection with Central Provisions, it uses the Baja Spice Mix. This seasoning brings spicy, smokey and herbaceous flavors to a favorite snack that will please every crowd this holiday season with a surprise punch from zesty lime juice!
Makes 2 quarts
Ingredients:
- 4 cups corn chex
- 3 cups rice chex
- 1 cup wheat chex
- 2 cup sesame sticks
- 1 cup pretzel balls
- 2 cups bagel chips
- 2/3 cup peanuts, raw unsalted
- 2/3 cup cashews, raw unsalted
- 155 grams (~ 1 1/4 sticks) unsalted butter
- 135 grams (3/4 cup) brown sugar
- 1/4 cup fresh lime juice
- 4 tablespoons (1- 1/4 cup jar) Baja Spice Mix
Directions:
- Preheat oven to 250F
- In a large mixing bowl combine all the chex, sesame sticks, pretzels, bagel chips and nuts.
- In a small pot over medium heat, melt the butter, brown sugar and lime juice together.
- Pour butter mixture over the dry mix and toss to evenly coat.
- Spread mixture on a foil lined baking sheet and bake until dry (approx. 45 minutes), stirring every 15 minutes.
- When pulled out of the oven and still warm, sprinkle the Baja Spice Mix over the chex mix and toss to evenly coat. Cool fully before serving!
Chef's note: Mix can be stored in an air tight container at room temperature for up to three months.
