Central Provisions' CP French Fry Spice is the perfect partner for this Korean-inspired BBQ sauce - expect a little bit of kick on your next rack of ribs!

Makes 1 rack of ribs and 1 pint of BBQ sauce

*This recipe requires an overnight marinade.

Ingredients:

For the ribs:

For the BBQ sauce:

  • 3 cups ketchup
  • 2/3 cup brown sugar
  • 1/2 cup rice vinegar 
  • 2 tablespoons tomato paste
  • 2 tablespoons gochujang
  • 2 tablespoons yellow mustard
  • 1 tablespoon fish sauce
  • 3 tablespoons CP French Fry Spice
  • 1 tablespoon black pepper
  • 1 tablespoon salt

Directions:

  1. Combine the CP French Fry Spice and brown sugar in a small bowl and mix well. 
  2. Rub the ribs with the spice mixture and refrigerate overnight.
  3. When ready to cook, set a smoker to 200 Fahrenheit and smoke for 1 hour. You could also bake in the oven or use a charcoal grill the same way (may loose smokey flavor).
  4. Wrap the ribs in parchment paper and then foil, and return to the smoker for another 1-2 hours, or until tender. 
  5. While the ribs are smoking, make the BBQ sauce. Combine all sauce ingredients in a sauce pan and cook over medium heat until bubbling, then reduce to simmer on low for 30-45 minutes until reduced slightly and thickened. Set aside until ready to use.
  6. Remove ribs from the oven and take away foil packet. Brush with BBQ sauce and increase heat to 300 Fahrenheit.
  7. Brush the BBQ sauce every few minutes until you have a nice sticky lacquer. Remove ribs and let cool for a few minutes.
  8. Cut and serve!
