Ingredients:

  •  1 lb. haddock (or other sturdy white fish)
  • 2 tablespoons SKORDO Mediterranean Fish Seasoning + more for sprinkling
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 green pepper, diced
  • 2 cloves garlic, minced
  • 1 28oz. can whole tomatoes (we used no salt added)
  • Salt

For serving: Brown rice (or preferred) or crusty bread

Directions:

  1. In a large sauce pan over medium-high heat, sauté onions and peppers with a small pinch of salt in olive oil until softened.
  2. Add the garlic and cook another minute or so, until fragrant.
  3. Add the tomatoes with juices and gently mash. Then add 2 tablespoons of  Mediterranean Fish Seasoning and a large pinch of salt (if you are using salted canned tomatoes, feel free to leave out additional salt if you'd like!)
  4. Bring pan to a boil and then shut off heat once boiling. Add in the whole piece of haddock. Sprinkle the haddock generously with Mediterranean Fish Seasoning.
  5. Cover pan and let poach for 30 mins.
  6. Serve over brown rice and enjoy!

Extra tips!

- Mix a little butter, breadcrumbs, and more Mediterranean Fish Seasoning together and top haddock before covering for a breaded option.

- Add fresh scallop chunks or another favorite shellfish to the dish for a heartier meal and added flavor.
