This recipe for Mediterranean Poached Haddock is our team member, Nancy's, favorite way to use SKORDO Mediterranean Fish Seasoning. Ingredients:
- 1 lb. haddock (or other sturdy white fish)
- 2 tablespoons SKORDO Mediterranean Fish Seasoning + more for sprinkling
- 2 tablespoons olive oil
- 1 onion, diced
- 1 green pepper, diced
- 2 cloves garlic, minced
- 1 28oz. can whole tomatoes (we used no salt added)
- Salt
For serving: Brown rice (or preferred) or crusty bread
Directions:
- In a large sauce pan over medium-high heat, sauté onions and peppers with a small pinch of salt in olive oil until softened.
- Add the garlic and cook another minute or so, until fragrant.
- Add the tomatoes with juices and gently mash. Then add 2 tablespoons of Mediterranean Fish Seasoning and a large pinch of salt (if you are using salted canned tomatoes, feel free to leave out additional salt if you'd like!)
- Bring pan to a boil and then shut off heat once boiling. Add in the whole piece of haddock. Sprinkle the haddock generously with Mediterranean Fish Seasoning.
- Cover pan and let poach for 30 mins.
- Serve over brown rice and enjoy!
Extra tips!
- Mix a little butter, breadcrumbs, and more Mediterranean Fish Seasoning together and top haddock before covering for a breaded option.
- Add fresh scallop chunks or another favorite shellfish to the dish for a heartier meal and added flavor.
