Why smash your potatoes? You get the best of both tender, soft insides and beautifully browned, crispy outsides in every bite. They can also be enjoyed either with a fork, or along with a dipping sauce and by hand! Our Cajun Blackening Seasoning provides just enough heat to these potatoes and make a great side dish for dinner or a zesty play on home fries for brunch!
Serves 4-6 as a side
Ingredients:
- 1 ½ lbs. small yellow potatoes
- 1/3 cup + 1 tablespoon avocado oil
- 2 tablespoons SKORDO Cajun Blackening Seasoning
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 yellow onion, chopped
- 2 garlic cloves, minced
Directions:
- Preheat the oven to 450 °F.
- Boil a large pot of water and add whole potatoes. Boil until potatoes are tender and easy to pierce with a fork, about 15 minutes. Drain in a colander and let cool.
- Line a baking sheet with parchment paper and place potatoes on the tray. With your hand or a potato masher, gently press the potatoes flat, about 1/4-1/2 inch thick.
- In a bowl, mix together Cajun Blackening Seasoning and 1/3 cup avocado oil. Brush the mixture over the potatoes. If you'd like to kick up the heat, add another tablespoon of seasoning!
- Place tray in the oven and bake for 25 minutes.
- While potatoes are cooking, cook the onion, peppers and garlic (you will be adding these to the baking sheet for the last 5 minutes of potato cook time.) Heat 1 tablespoon avocado oil in a skillet over medium heat.
- Sauté the onions and cook until translucent, about 4-5 minutes. Add the peppers and garlic, sauté until tender. After potatoes have been cooking for 20 minutes, add onions, peppers and garlic to the tray and cook for the last 5 minutes.
- Remove from oven and put in serving dish. Enjoy!
