The Urfa Biber is a dried chile native to southern Turkey. Known as the secret ingredient by many professional chefs, it boasts a wonderfully well-rounded smoky and earthy flavor with hints of coffee, chocolate and raisins. Slightly hotter than Aleppo, it has a medium heat level that starts mild and progresses over time. Common in Turkish cuisine, it is a main ingredient in lamb kebabs and many Middle Eastern yogurt sauces.
