Sassafras bark has an astringent, citrus-fennel aroma. Common in creole cooking, gumbo is often started with rue made from sassafrass, butter, or margaine. Many Americans remember making sassafras tea using sassafras root in the early spring months - it's an American tradition. Please note that our sassafras root does contain safrole, as it is a natural part of the plant.
