Lovage is strongly aromatic and smells somewhat similar to celery, but is more pungent with hints of anise, lemon, and yeast. It is used as celery or parsley in almost any dish, but is stronger than both so use with caution. We use it often in seafood chowders or soups with potato or carrots. It's also a lovely addition to potato pancakes. Pungency diminishes with cooking so be sure to add near the end of the cooking process.
