Japones chiles, considered hot with a clean and biting taste, are very common in Chinese and Japanese recipes. Use them in chutneys, salsa, and stir-frys, or add some Japones to a tomato sauce for chili. They also go very well in Thai curry dishes and hot peanut sauces.
