Galangal, very common in Thai cooking, has a sweet, tangy, and gingery taste. It goes well with chicken and in many hot and sour soups. Use it to make a Thai curry paste or add it to coconut curried shrimp and chicken and coconut milk soup. You can also add it to meat skewers along with a spicy peanut sauce for some added flavor. Galangal also neutralizes the smell of fish or seafood.
