Chocolate Melting Tips!
The only thing worse than burning chocolate, is seizing it. This happens when moisture is added to chocolate. Water is the enemy to chocolates. The best preventatives are always storing your chocolate in a cool, dry place + ensuring all bowls/pans/tools are completely dry before they interact with chocolate. Unfortunately moisture ruins the entire chemical makeup of the crystals in the chocolate so it cannot be saved at the point of seizing. Happy melting!
Mediterranean fish pita "tacos"
Something quick and fun with our new Mediterranean fish seasoning and Tzatziki. Just a little olive oil and liberal coating of season on Haddock and bake on a broiler pan at 400° for 20 minutes. While the fish cooks take care of all of your dicing and that's it.

Bison Meat Sauce using SKORDO Italian Seasoning
My friend came over and made some very delicious bison meat sauce & pasta, using skordo's Italian blend and the crushed red pepper flakes. First time having bison, and I think I'm a fan! Chicken Fried Rice w/ SKORDO Togarashi
A few nights ago I used the togarashi blend in chicken fried rice. So good, it had just enough spiciness that I didn't have to chug a gallon of milk afterwards but it really added to the dish! Next time I just have to remember the water chestnuts and bean sprouts lol!
